Grilled Chicken Fajitas

Happy Father's Day to all the Dad's out there! Nothing says Father's Day like a feast......at least that's how it is around here. One of our favorites is Grilled Chicken Fajitas.


You will need frozen chicken breasts (one per person, I used 6), a selection of red and yellow peppers, yellow onion, tequila, lemon or lime juice, chopped garlic, salt and pepper, sour cream, fresh cilantro, flour tortillas, and of course Wisconsin Pepper Jack Cheese.


First thing to do is make the marinade for the chicken. Use 1/2 cup lemon or lime juice, 1/2 cup tequila, 4 tablespoons vegetable oil, 4 teaspoons chopped garlic, 1 tablespoon chopped cilantro. Pour it over the chicken and refrigerate 2-3 hours or overnight.


While you wait jam out to some classic Spanish guitar, my favorite is this CD by Ottmar Leibert from Target. 

You can also chop the peppers (I just used a two big handful of the little peppers) and the onion. 




I throw them both together in a grill safe pan. I use my stainless steel baking pan from Revere Ware.


Next I open the re-fried beans and add a bit of water to them. I put them in a cast iron skillet so they can be warmed right on the grill with everything else.


Shred the cheese, and off we go to start the grill.


I realize that this entire process may not take 2-3 hours while your chicken marinates. But, I am impatient. Have I mentioned that?


I throw everything on at once. The beans and tortillas are warming on the top shelf. I love our giant army sized grill. You can cook anything on it.


Before I add the peppers and onion mixture to the grill, I toss in a handful of ice cubes. They provide just enough moisture to steam the vegetables. Don't forget to cover it with foil.


Let the whole works cook for 10-15 minutes, turning the chicken as needed, stirring the vegetables and beans, and occasionally flipping the tortillas until they are warm all the way through the stack.


Meanwhile, I set the table. Today I am not fussing much, but I wanted to show you these great cork trivets that I use. You can get them from your local garden center or at Ikea for less than a dollar. They work great under hot dishes, I love that they come in different shapes to fit my pans on. I also use them under all my potted plants to prevent rings from developing on the surface below.


When the chicken is cooked, I take it off the grill and slice into small pieces.


Look'n good! Time to serve............
