Day 18: Whole Grain Nutella Waffles




We love waffles at our house. We have had waffle withdrawal for quite some time because my favorite waffle maker bit the dust several years ago. 


We recently rescued a cast off waffle maker from Grandma and Grandpa, so we are back in the waffle business! Yipee!

I have lots of waffle recipes, but my personal favorite are made with Buckwheat flour. It has a heavier texture than white flour, and more of a bitter taste. Combined with the bitter taste of unsweetened cocoa powder and the sweet taste Nutella, it's a winning combination. If you love whole grain foods, you will be addicted to these waffles. Here's your ingredient list:


2 cups buckwheat flour
3/4 cup Hershey's Unsweetened Baking Chocolate Powder or Carob Powder
2 eggs
2 3/4 cups coconut, almond or rice milk
1/2 cup Nutella
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 cup canola oil
2 tsp. vanilla
Butter or spray for greasing the waffle maker



Combine the dry ingredients: buckwheat flour, chocolate, baking powder, soda, and salt in a medium sized bowl. Mix thoroughly and set aside.


In a separate bowl, beat the eggs lightly with a wire whisk.


Then add the liquid ingredients: coconut milk, canola oil, and vanilla. Combine.


Then add the liquids to the dry ingredients. 


Stir until moistened. Then add the Nutella.


The batter will be rather thick, similar to cake batter. The whole grain flour tends to suck up a lot of liquid, if needed, add a bit of water to make it more manageable.


Look'n good!


Grease your pre-heated waffle iron (I prefer butter), and add the mix.


They come out all brown, chocolaty and toasty. I never seem to be able to make perfect waffle corners. Why is that? Oh well, they sure are yummy anyway!


I added more Nutella between the layers, and a bit of butter on top. No syrup is required, but you can indulge yourself if you wish. 

I am freezing my waffle leftovers in packages of two with the Nutella in the middle for our upcoming camping trip. I figured I could warm them in tin foil beside the campfire for breakfast on the go. Not sure how the Nutella will freeze, but I will let you know!
