Nutella Day 9: Nutella Breakfast Parfait



We love ice cream and yogurt at our house, the family dairy business has been around a long time. The problem is that the family business is an hour drive from our home, and it's hard to get in the car and go when you want a little something special. It's particularly hard early in the morning, when you are still shuffling around in your pj's and slippers. So, today's treat is a high protein breakfast Parfait with Nutella.

I must say I kind of cheated though, I used Greek yogurt instead of ice cream. But the Nutella and strawberries are very real. And then there's the granola. About that granola, I make it myself. I refuse to pay the ridiculous prices of boxed granola at the grocery store. Here's a quick tutorial:


The basic ingredients are rolled (not instant) oats, golden flax seed powder, honey, flax seeds, cinnamon, raisins, canola oil, Mapleene, and vanilla.


I start with 3 cups of oatmeal.


Add 1/2 cup ground golden flax seed.


Add 1/2 whole flax seeds.


Then add 2 Tablespoons each of canola oil and honey. I also add 1 tsp. each of Mapleine and vanilla.


Stir it all up. You want the liquids to coat the dry ingredients.


Spread it out on a large cookie sheet. Then bake in a 200 degree oven for 1 1/2 hours, stirring occasionally. I like to make a big batch all at once. It stores easily in a plastic container in your cabinet. I add the raisins when it is completely cool.

This is not rocket science. I vary my recipe almost every time I make it depending on what leftover grains I happen to have on hand. Here are some more possible ingredients. Don't be afraid to experiment.

Barley
Bulgar wheat
Oat bran
Rice Bran
Wheat germ
Steel cut oats
Millet
Triticale Berries
Lemon or Orange Zest
Apple juice or cranberry juice (small amount like 1/3 cup)
Dates
Brown Rice
Hominy Corn
Quinoa
Coconut
Sesame seeds
Sunflower seeds
Almonds
Walnuts
Pecans
Craisins

So then to make the Parfait, I layered Nutella, plain Greek yogurt, my homemade granola, and strawberries in a glass. I had to repeat it all again, just to make sure I didn't forget anything. Don't forget the big dab of Nutella on the top. My kids loved it and came back begging for more.
