Ramen Noodle Salad

Hi all! It's been hot here again in the Mid-west, too hot to be cooking much. I love summer picnics on hott days with lots of cold salads. One of my favorites is Ramen Noodle Salad. Perhaps you have seen it at picnics or potluck's before and didn't know how to make it. Well, here it is!


Here's your ingredient list:


White vinegar, 2 packages chicken flavored Ramen Noodles, a bag of Broccoli Slaw, Canola oil, sugar, almonds (or cashews), and a bunch of green onions.


In a large bowl combine the broccoli slaw and chopped green onions.


Add the nuts. You can add extra if you like, or just use a cup of them.

Remove the chicken flavor seasoning packets from the Ramen Noodles, and crush the remaining noodles with a rolling pin. Set aside.


Add the chicken flavor packages to a medium sized bowl or measuring cup. Add 1/2 cup sugar, 1/2 cup Canola oil, and 1/4 cup vinegar.


Whisk it all together.


Pour the dressing over the salad. Add the crushed noodles just before serving to keep them crisp.


It's very popular for pot luck dinners, not to mention affordable. What's cheaper than Ramen Noodles? Not organic, but definitely a part of our super thrifty home schooling food budget.
