31 Days of Pintrest DIY: Day 18 Pizza Rolls

I have been on the road the last few days, so I haven't been able to post my latest creations, but here's one I have had on my laptop for a while, and I know you will enjoy. More to come soon!

Friday night is pizza night at our house. Every week we experiment with different combinations of crust, sauce and toppings. We all have our personal favorites, but we all agree that Pizza Rolls are the best.

I found this on Pintrest a while back, and couldn't resist including it in my 31 Day blog project. We did put a little twist on things though...

My Pizza Rolls begin with a great crust made from scratch, but if you are in a hurry you could use pre-made frozen bread dough. Here's my crust recipe:

1 1/2 cups warm water (105 degrees)
4 cups Unbleached All-Purpose Flour
1 1/2 Teaspoons Salt
2 Tablespoons Olive Oil
2 Packages Dry Yeast

Add the yeast to the warm water, let sit for 5 minutes until foamy. Then add the olive oil, salt and 1 cup flour. Stir to combine, gradually adding the rest of the flour. Remove from bowl, kneed for 5 minutes until smooth and elastic. Put in an oiled ceramic bowl, cover with plastic wrap or a damp towel. Allow to rise for 1 1/2 to 2 hours in a warm place until doubled in size.


Punch down dough, divide into two parts. Roll out dough on a floured board, 1/2 thick into a rectangular shape.


Add the filling. Spread fresh tomato sauce or canned pizza sauce over dough. Top with your favorite toppings. The sky is the limit here, but we do have some favorites:

ground beef
pepperoni
crumbled Italian sausage
black or green olives
red or yellow onion
chopped red and green peppers

 Dust with Italian Seasoning or Rustic Italian Seasoning with Red Pepper Flakes (from Costco). Cover with shredded mozzarella and or parmigiana cheese.


Roll the dough with all the fillings inside, lengthwise, like you would make cinnamon rolls.


Pinch the end of the dough roll so it holds together. Thickly slice the roll into 1" sections.


Cover a pizza stone or pizza pan lightly with cornmeal to keep things from sticking.


Lay the rolls down on their sides, 1" apart.(Mine are too close together in this photo, they will increase in size while cooking and make a mess in your oven if you don't leave room for them to grow.) Cover with a towel and let rise 15 more minutes.


Sprinkle the rolls with additional mozzarella cheese. Bake in a 450 degree oven for 15-20 minutes. Add an extra pan under the rolls in case they over flow. Bake until golden brown.


This is another example of a meal that is so popular at our house, I am not always fast enough to get a picture of the finished product. They are always gone in 5 minutes! We love these for parties and feeding a crowd. One roll is a perfect serving size!
