I promised this post a couple days ago, sorry for the delay! I have tried a number of DIY Protein Bar recipes, and this one definitely is the winner! They are very easy to make and require no cooking. I have calculated them to have in the neighborhood of 275 calories each, depending on the size of the bar.
Don't they look yummy? It's the chocolate layer on the top that really makes them tasty.
You can use just about any combination of dry ingredients for this recipe, but I used oatmeal, flax seed meal, peanut butter, coconut oil, vanilla protein powder, seseme seeds, Craisins, coconut, milk chocolate chips (or dark chocolate), and a small amount of butter.
Protein Bars
3 cups oatmeal
1/4 cup flax seed meal
2 scoops vanilla protein powder
1/2 cup peanut butter
1/2 cup peanut butter chips (these aren't pictured, sorry)
1/2 cup coconut oil, melted
1/2 cup raisins
1 cup chocolate chips
2 tablespoons butter
1/2 cup water
Combine the dry ingredients in a large bowl.
Use all ingredients except the chocolate chips.
Add the peanut butter and combine thoroughly. The dough will be crumbly.
Add the water. Meanwhile, melt the coconut oil.
Then add it to the dry ingredients and stir. Press into a lightly greased 9 x 13" pan with a spatula.
In a double boiler or microwave, melt the butter and chocolate, then pour over bottom layer and thinly spread.
Chill until firm, and then cut into bars.
They make a great snack!
