I love shopping thrift stores for great pans. Am I the only one who does this? Many of my favorite cooking pans come from Goodwill or St. Vincent's. I scored this heart shaped Schlemmertopf recently, and I was so excited. Isn't it just adorable?
If you have read some of my other posts you will note that I love to make big breakfasts. This pan inspired me to cook a Valentine's breakfast meal. This oven pancake recipe is really easy and fast. It serves 8 but you can also cook it in individual souffle-like portions if you prefer.
Preheat your oven to 450 degrees. Gather your supplies: 8 eggs, 2 cups flour, 2 cups milk, 1/2 cup butter, 2 tsp. vanilla.
Pull out your Ninja or blender. Blend the eggs until bright yellow.
Add the vanilla and milk.
Gradually add the flour and blend until smooth.
Meanwhile, put the pan in the oven with the butter, until it is melted.
Pour the egg mixture from the blender into the melted butter. Bake at 450 degrees for 20-25 minutes. Don't mind my messy oven, it is well used. I should clean it one of these days....
To check for doneness, insert a toothpick in the center. It will come out clean when the pancake is fully cooked. I love the way the pancake puffs up like a souffle in the oven, it's beautiful and golden!
Serve immediately with raspberry or blueberry jam, or seasonal fresh fruit and dusting of powdered sugar.
