Easy French Toast

I haven't been cooking much lately. I am not sure why that is, but I just haven't been inspired to make anything especially interesting.

The exception would be breakfast. I love cooking breakfast from scratch. There is something wonderful about waking up to delicious smells in the morning.

French toast is one of my all time favorite easy recipes. You simply can't go wrong. It's a great way to use up old bread, soy or almond milk, regular milk, cream, eggs or egg whites.

Here's what you will need:

1 egg per person
1/4 cup milk per person (I use Almond Milk)
1 tsp. or more vanilla
2-3 pieces of bread per person

Syrup or your choice of fruit, jam, nuts, applesauce, chocolate chips, whip cream or yogurt for toppings.

Put all ingredients in a bowl and whisk together. Pre-heat a griddle to 350 degrees and grease with a bit of butter. Dip each piece of bread into the milk mixture, coating both sides. Remove and immediately place on hot griddle.

Cook 2-3 minutes on each side until brown. Serve hot with butter and toppings.

Morning never tasted so good!
