Day 15: Nutella Cheese Log

BEWARE this post may be hazardous to your cholesterol....................

Here in the Dairy state we covet all things cheese. We have every imaginable variety available to us, and we take for granted the hundreds of cheeses available to us in the grocery store. It's hard for us to comprehend that there are parts of the country that don't have a giant isle of cheese in the grocery store. My in-laws family business is a cheese house and restranut called Crystal Creek Dairy. They sell just about any diary item you can imagine, but especially cheese by the pound. One of the most popular choices is Chocolate Cheese. Yes, you read that right, Chocolate Cheese.

I love Chocolate Cheese. The only problem is that so does the rest of the general public. They are constantly sold out. What's so amazing about it? It tastes like fudge. Truely, FUDGE. This is the answer to those high protein diets where you can't eat sweets or carbs, but cheese is allowed.

Here's my version: the Nutella Cheese Log.

Simple ingredients: Walnuts, Cream Cheese and Nutella. Have them all room temperature.

Cut up the cream cheese into pieces and put it in a blender.

Add 3 heaping tablespoons of Nutella. Blend them together until smooth and creamy.

Break up the walnuts into little pieces with a rolling pin or hammer.

Spread the nuts out on a piece of plastic wrap. Put the Nutella cheese mixture in the center. Try to make an oblong shape.

Then gently close the plastic, rolling the Nutella mixture so the nuts completely cover it. Close the ends, refriderate until firm, overnight is best.

This is dessert, it is super rich. One little piece will put you in heaven. You could serve it on crackers, with fresh fruit, or a dessert wine. I enjoyed this Pinot Noir by Rex Goliath with it. (Don't you just love the cute bottle?)

Savor every bite!
