It's been crazy around here today. I thought for sure that since I had the day off from work and had no plans, I would get lots of things done. We are moving at the end of the month and I always under estimate how long it actually takes to do things. My to do list didn't seem that long, however, I guess I am guilty of not writing things down and still doing them even though I know they aren't on the list. Number one on today's list was make Coconut Pie which I am at long last getting around to. Who's big idea was it to post for 31 days in a row anyway? Mine of course, I guess I should have figured moving into the picture! Fortunately today's recipe is a cinch to make.
Coconut Pie with Nutella ingredients are simple:
Sweetened coconut, Coconut Milk, All Purpose Flour, Nutella, Sugar, Butter and Eggs
Put the eggs in a medium sized bowl.
Add 1 3/4 cups sugar.
Add 1/2 cup flour and 2 tsp. baking powder.
Add 2 cups coconut milk.
Then add the 2 tsp.vanilla and 1 1/2 cups shredded coconut. See the little dribble in the side of the bowl? That's the vanilla. I like to add extra, I love vanilla.
Meanwhile, melt 1/4 cup butter with 1/2 cup Nutella. Blend until smooth. Then add it to your bowl with the other ingredients.
Mix it all up until smooth.
Pour into a 9" pie plate. You don't have to grease the pan. Depending on how deep your pan is, you may have extra batter. I like to pour it into a ramekin and cook it separately for my youngest son. He loves having his own little piece of pie.
Bake in a 350 degree oven for 45 minutes. This pie makes it's own crust so you don't have to fuss with it.
