These are Whoopi Pies. Have you ever had a Whoopi Pie? We love them with Nutella filling. Somehow I managed to delete the pictures I took of making these cookies, you will have to get by without visuals for this one!
This basic cookie recipe comes from Cook Books from Amish Kitchens: Cookies. I love it because it makes a big batch. My kids love them because they look like giant Oreos. Who doesn't love Oreos? I love these with Nutella in the middle. Those Amish girls sure gotta good thing going!
2 cups sugar
1 cup butter
2 eggs
4 cups flour
1 cup unsweetened baking chocolate powder
2 tsp.vanilla
1 tsp. salt
1 cup soured milk ( or 1 cup milk with 1 Tablespoon lemon or vinegar added)
2 tsp. baking soda
1 cup hot water
1/2 cup Nutella and 1 container of whip topping for filling
Cream sugar and butter. Add eggs. Sift together dry ingredients. Add the soured milk and vanilla. Dissolve baking soda in hot water, add last. Mix well. Drop by teaspoons onto cookie sheet (beware, they spread a lot!). Bake at 400 degrees for 8-10 minutes.
Combine the Nutella and softened Whip Topping in a blender. When cookies are cool, make sandwiches by spreading Nutella between the cookies. They are best frozen. Yummy!
