Chocolate Tofu Pie- Repost


This is a re-post of our favorite chocolate pie recipe. It's a good source of protein and has just a few ingredients. A great treat for Sunday dinner!

I haven't been cooking much lately, it has been sooo hot. Many people don't feel like eating much in hot weather anyway, unfortunately my children are not among them. So, I recently whipped up a family favorite, the Chocolate Tofu Pie. It's super easy.

You will need a package of soft tofu, a graham cracker crust (I buy the larger one for our family), a large container of Cool Whip, a bag of dark chocolate chips, and some maple syrup.


The first step is to whip up the tofu in a food processor or blender.


I like to cut mine up into chunks, it blends smoother that way.


Put it a large bowl and set it aside.


Melt the chocolate chips on the stove in a double boiler. You could microwave them too if you prefer.




When they are smooth and creamy, add them to the tofu.


Quickly combine them, the chocolate begins to harden rapidly. You can also do this in the blender for a smoother consistency. Mine happens to be on the fritz, so I combined them by hand.

Then add the entire container of Cool Whip.


Stir until combined.


Drizzle in two tablespoons of maple syrup, and stir a little more.

Then fill your pie shell.


Refridgerate until firm, approximately 1/2 hour. How easy is that?

This pie is so rich, your family will have no idea they are eating tofu. Perhaps you won't want to tell them until AFTER they have eaten it. They will be hooked, I promise you.
