Gifts Wrapped in Glass: Day 25


What are the signs of a disorganized mind? I have Halloween decor, Thanksgiving decor and Christmas decor laying all about the house. I have jars full of gifts, empty jars, jars in progress, and jars I don't know what to do with yet.

I also have laundry, dishes, homework to correct, bills to pay and tons of house keeping to do. Yet I find myself drawn to ignoring it all and cooking. Why is that?

It makes me happy. I love cooking beautiful things.



Nothing could be more beautiful than today's GIFT WRAPPED IN GLASS,

CRANBERRY-APPLE RELISH!


Whip up a batch and have it on hand for the holiday season. It makes a great hostess gift or a beautiful addition to any poultry dish for the season.

Here's what you will need:

1/2 c. cider vinegar
2 c. brown sugar
3 1/2 c. fresh cranberries
1 c. dried cranberries
2 Tbsp. grated fresh ginger root
1 c. spiced apple sauce
2 Tbsp. bottled lemon juice
1 1/2 c. chopped Granny Smith apples
6 Half pint Mason Jars

Combine cranberries, vinegar, brown sugar, and 1/2 c. water. Add remaining ingredients. Cook for 15-20 minutes until apples are soft and cranberries have popped open. Remove from heat. Ladle into sterilized jars leaving 1/4" headspace. Process for 10 minutes in a boiling water canner.

You could also refrigerate these jars until needed without using a boiling water canner. The relish would keep for about 10 days without spoiling.



I love the addition of Grandma's lace doilies to these jars. They look so festive and classic!

My favorite holiday combination is turkey with wild rice and cranberry relish. Cranberries also make a wonderful side dish for roast pheasant and duck.


You'll never buy another jar of store bought cranberry jelly again. Trust me on this one!
