This is my last Nutella post. I am sad to say it's over, because I have had such a good time doing it! Hope you have had a good time reading. However, we are all packed and ready to move so it must come to an end. However, I am going out with a BANG! I saved my all time favorite dessert for last, one that will make you swoon: Nutella Tiaramisu
This is my interpretation of the Frugal Gourmet's recipe:
The Filling
1 1/2 cups espresso coffee, room temperature
1/2 cup sugar
1/4 brandy, rum or Kahula
2 egg yokes
1 lb. cream cheese or mascarpone cheese softened at room temperature
1 cup Nutella
1 package of Lady Fingers (8 oz.)
Icing
1 cup whipping cream
1/4 teaspoon vanilla
2 tablespoons powdered sugar
Unsweetened cocoa powder for garnish
Shaved chocolate for garnish
Whisk egg yokes into 1/3 cup espresso coffee, set aside. Stir remaining espresso, sugar, and brandy in a bowl until dissolved, set aside. Whip the Nutella with the cream cheese, slowly pouring in the coffee and egg mixture. Combine until smooth.
Dip the ladyfingers quickly into the espresso coffee and brandy mixture, place them crosswise in a 9 1/2 by 5 1/2 loaf pan that has been lined with wax paper. Spread 1/2 of the Nutella mixture over the ladyfingers. Then add a layer of shaved chocolate. Repeat. Finish with the remaining soaked ladyfingers. Cover and refridgerate 6 hours.
Invert the loaf pan on a serving platter, tapping the bottom of the pan to remove the loaf. Remove the wax paper. Whip the cream, vanilla, and powdered sugar until stiff. Spread the whip cream all over the inverted cake. Dust with the unsweetened cocoa powder, and garnish with the shaved chocolate. Slice and Serve.
