We love Mexican food at our house. At least once a week we feast on burritos, tacos or quesadillas of some kind. When we were in Florida last fall we had the most amazing fish tacos, and I have been trying to recreate them ever since. Fish Tacos are not difficult to make, we really enjoyed this recipe from The Eating for Life Cookbook Bill Phillips.
Ingredients:
2 lbs. white fish, we purchased Swai from Aldi's
1 avocado
4 limes
1 tablespoon olive oil
2 jalapeno peppers, diced
5 tablespoons minced garlic
1/4 cup chopped onion
2 tsp cumin
2 tablespoons fresh cilantro, chopped
Lettuce
Tortillas
Lime or Lemon for garnish
I defrosted the fish in cold water for 1 1/2 hours.
Meanwhile, I made the marinade. I began by juicing 3 of the limes. Then added the olive oil, 4 chopped gloves of garlic, and 1 tsp. cumin.
After the fish was defrosted, I poured the marinade over the fish. I know this looks like a lot of garlic, but for our family of 6 I double the recipe above. I let the fish marinade for 15 minutes.
While the fish was marinating, I made the salsa. Combine 2 chopped jalapenos ( I substituted hot banana peppers), the chopped onion, avocado, chopped cilantro, 1 tsp.cumin and the juice of one lime.
I love how colorful this salsa is.
Place the fish on a hot grill and cook for 5 minutes on each side until flesh flakes easily with a fork. Slice into strips and fill the tortillas with the fish slices, salsa, and lettuce.
I must admit that we are usually not big fish eaters at our house, but we all agree that these tacos are the best! Give them a try, you may be surprised at how delicious they can be!

Yum! These look great! So I went to the Mexican market on Whitney next to Coppertop yesterday and got their fresh local steak taco meat and made tacos and they were fabulous! They also make their own chorizo beef or pork. We discovered chile tepin from a friend who brought some back from Mexico and the dried ones were only $1.59 at the market and they smell soo good. They may make a great new addition to your Mexican dinners weekly. :)

ReplyDeleteThese look yummy! My daughter, Emily, & I (we are about 90% vegetarian) will sometimes make a shrimp taco with broccoli slaw and adobe chilis that is awesome! We might have to give these a try the next time we go non-vegetarian.
